Since v1.12, you can give sslh an actual configuration file;
there are 2 examples in the source (example.cfg which shows
everything, and basic.cfg which fairly simple and sensible).
(In Debian you should find them in
/usr/share/doc/sslh/examples).

Using the configuration file is as easy as:
sslh -F mysslhconf.cfg
